Ingredients to serve 4:
4 large cooking apples
4 teaspoons mincemeat
4 tablespoons brown sugar
8oz/250g shortcrust pastry
Milk for glazing
Peel and core the apples and stuff each with a teaspoon of mincemeat mixed with a tablespoon of sugar. Press four cloves into each apple.
Roll out the pastry and divide into four squares, each big enough to wrap around an apple. Place an apple in the centre of each pastry square, dampen the edges with water and fold up the corners to meet at the top, completely encasing the apple.
Place the cumplings on a greased baking tray, brush with milk and sprinkle with caster sugar. Bake in a preheated oven at 180 degrees C/gas mark 4 for about 30 minutes.
