Ingredients to make 12 portions:
6oz/175g plain flour
6oz/175g brown sugar
6oz/175g black treacle
5oz/150g butter or margarine
1 teaspoon ground ginger
Pinch of bicarbonate of soda dissolved in
1 tablespoon of warm milk
Method:
Beat together the sugar and slightly softened butter.
Add the treacle and mix until creamy.
Sieve the flour and ginger and fold into the mixture.
Add the dissolved bicarbonate of soda and milk and mix in well.
With well-floured hands form the mixture into about 12 portions and place them well apart on a greased baking tray.
Bake at 190 degrees C/gas mark 5 for about 15 minutes, or until crisp and allow to cool.
