Ingredients to serve 8:
2 medium smoked mackerel
4oz/110g cottage cheese
1/4 pint/150ml fresh or soured cream
Juice of half a lemon
Salt and black pepper
Nutmeg
Method:
Skin and bone the mackerel, then flake the flesh into a food processor, together with the cottage cheese, cream and lemon juice.
Blend until smooth, season with salt, pepper and grated nutmeg and spoon into individual ramekins. Cover and chill before serving.
